Mutton Pakku Recipe for the Festival Season

Mutton Pakku is a delicious, traditional Nepali dry mutton dish, especially popular during festivals like Dashain and Tihar. It is rich, spicy, and full of flavor, making it a perfect accompaniment for your celebrations.

Ingredients:
1 kg mutton (with bones)
3 tbsp oil (mustard oil is preferred)
2 large onions, finely chopped
1 tbsp garlic paste
1 tbsp ginger paste
2 tomatoes, finely chopped
3-4 green chilies, slit
1 tsp turmeric powder
2 tbsp Century Meat Masala (Buy here)
1 tsp cumin powder
1 tsp coriander powder
1 tsp red chili powder (adjust to taste)
1 tsp garam masala
Salt to taste
Fresh coriander leaves for garnish


Instructions:
Marinate the Mutton:
Clean the mutton and marinate it with turmeric, salt, and 1 tbsp of Century Meat Masala. Let it rest for at least 30 minutes for the flavors to infuse.

Cook the Mutton:
In a deep pan, heat mustard oil until it starts to smoke slightly. Add the finely chopped onions and sauté until golden brown.

Add Ginger, Garlic, and Tomatoes:
Stir in the ginger and garlic paste, cooking until the raw smell disappears. Add the chopped tomatoes and green chilies, cooking until the tomatoes are soft and start releasing oil.

Add Spices:
Lower the heat and add cumin powder, coriander powder, remaining Century Meat Masala, red chili powder, and garam masala. Stir everything together for a minute.

Simmer the Mutton:
Add the marinated mutton to the pan and cook on medium heat for 10-15 minutes, stirring occasionally to brown the meat.

Slow Cooking:
Reduce the heat, cover the pan, and let the mutton cook in its own juices. If needed, add a little water to avoid burning. Cook until the mutton is tender (about 45-60 minutes), stirring occasionally.

Serve:
Once the mutton is cooked and dry, garnish with fresh coriander leaves and serve hot with beaten rice or rice.
