Nepali Style Chicken Chowmein
Ingredients:
– 250g chowmein noodles
– 200g boneless chicken, thinly sliced
– 2 tablespoons vegetable oil
– 1 medium onion, thinly sliced
– 1 medium carrot, julienned
– 1 bell pepper, thinly sliced
– 1 cup cabbage, shredded
– 2-3 cloves garlic, minced
– 1-inch ginger, minced
– 2 tablespoons soy sauce
– 1 tablespoon oyster sauce
– 1 tablespoon chili sauce (adjust to taste)
– 1 teaspoon turmeric powder
– 1 teaspoon cumin powder
– 1 teaspoon coriander powder
– Salt and pepper to taste
– 2-3 spring onions, chopped
– Fresh cilantro for garnish
– Lemon wedges (optional)
Instructions:
1. Cook the Noodles:
– Boil water in a large pot. Add a pinch of salt and the chow mien noodles.
– Cook according to package instructions until al dente.
– Drain and rinse with cold water. Toss with a little oil to prevent sticking and set aside.
2. Prepare the Chicken:
– In a bowl, mix the chicken slices with turmeric powder, cumin powder, coriander powder, and a pinch of salt. Let it marinate for 10-15 minutes.
3. Stir-Fry the Vegetables:
– Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat.
– Add the garlic and ginger, stir-frying for a minute until fragrant.
– Add the sliced onions, carrots, and bell pepper. Stir-fry for 2-3 minutes.
– Add the shredded cabbage and cook for another 2 minutes until the vegetables are tender-crisp. Remove from the wok and set aside.
4. Cook the Chicken:
– In the same wok, add the remaining 1 tablespoon of oil.
– Add the marinated chicken and stir-fry until fully cooked and lightly browned, about 5-7 minutes.
5. Combine Everything:
– Add the cooked vegetables back into the wok with the chicken.
– Add the cooked noodles and pour in the soy sauce, oyster sauce, and chili sauce.
– Toss everything together to ensure the noodles and vegetables are evenly coated with the sauces.
– Stir-fry for another 2-3 minutes. Adjust seasoning with salt and pepper as needed.
6. Garnish and Serve:
– Remove from heat and stir in the chopped spring onions.
– Garnish with fresh cilantro and serve hot with lemon wedges on the side.
